It's Harder Than I Thought

Meaning, getting into the swing of having and maintaining a blog again.
Life is life.
What I wish that could happen right at this moment is that I would magically appear on a creamy, silky sandy beach somewhere. Where there is nothing to do but wonder how many of those delectable pina coladas I have consumed. Warm turquoise water that makes you wonder how you've gone so long without experiencing it!
Far away from the dialysis clinic my husband needs to be at almost 15 hours a week. Even farther away from things that seem to consume my mind on a consistent basis. I was never a person that worried. Now it seems like I do nothing but. Aside from my fantasy of an island getaway my other wish would be not to have to worry ever again. I don't like being this way. It's so not me. But you know what? My future is out there and I will achieve a peaceful state. I will absolutely not be this way forever.
It's taken me a while but it's good to be back.

Cupcakes!
My latest fascination is creating cupcakes, I would say it's been a fascination since childhood. Growing up I loathed that my birthday was in the middle of August. I would have no chance for my Mom to bake sweet little morsels of cake and frosting to me and my classmates. No chance that I would receive gifts of something besides school clothes either! Don't get me wrong, I love my birthday. Absolutely love the extra attention that is showered upon me, but I never was able to enjoy my day at school. So that's why I work on my birthday every year!
I love birthdays and I love my friends (and if I lived closer to my family they would get the same treatment). But they choose which kind of cupcakes they would like and I make them. Today I brought in a batch of mint chocolate chip for our friend Eric. Mint cake (in color and taste) with mini chocolate chips and mint frosting.
A couple of weeks ago I made a batch of Black Bottom cupcakes and that was the first time I had made them and was so surprised by the results I wanted to immediately make them again! Very rich, and no need for glaze or frosting.
I will post updates on the different kinds as I make them.

Glorious Weekend
I dragged Kip off to see Forgetting Sarah Marshall this weekend. I needed to see something funny and most of it was. If you go see this movie prepare to see ummm, naked man parts. Truly, wasn't expecting to see that - 5 times!
Saturday night we met up with our friends Erin and Johnny to watch the Cavaliers whoop on the Celtics with the final score being 108 - 84. The Indians didn't do to shabby either. 12 - 0 against Toronto! Saturday was the day for Cleveland teams.I'm going to see my first Indians game on June 14th, I'm so excited! I love seeing baseball live, there's nothing like it. I've seen the Cavaliers play, now I just need to see a Browns game.

Oh Potatoes How I Love Thee
How does she continue to top herself? I love her, I really truly do. I made her "Basic Breakfast Potatoes" for dinner last night and I swear these are the best potatoes ever. Besides, of course, for Ree's mashed potatoes. To.Die.For.I just love finding new things to make. I would have made them again tonight, but I didn't have any more potatoes. Darn.

Ironman Rocked!
From the beginning of the movie seeing Robert Downey Jr. as Tony Stark, to the tail end of the credits (which you need to stick around to the very end) was so cool. Kip was so excited to finally see it and so was I.
I should mention that yesterday we went to a Max & Erma's and got a free meal! We were seated and ordered drinks and an appetizer and promptly began reading. We received our order of onion rings and didn't realize that a little time had gone by when our server came to tell us they misplaced our ticket and that she would buy us a dessert for our trouble. We looked at each other and we were both thinking "score!"
The manager heard the tail end as our server was telling us what had happened. She repeated the issue to him and we hear him jokingly say he's going to kill the cook. Our food came out shortly after that.
Then our server brings the bill when we were finished and I look at it and then show Kip. The total on the bill says $3.29. I think there's been a reverse deduction, she took off everything but the dessert! The manager came back by to ask if everything was okay and I show him the bill and he says that she shouldn't have charged us for the dessert either. We are confused at this point and he explains that we had to wait 26 minutes for our meal. He says that it's understandable if they were busy but there only a few tables occupied in our same section. We say it really wasn't a problem and he insists that the meal was on him because we came in for a nice lunch and that's what we will receive. He apologized again for the wait and we thanked him for excellent customer service. We tipped our server and headed off to the bookstore.
Neither of us could believe what just happened, it made our day to say the least!
Just thought I would share something that seems to rarely happen anymore.
